To give your students a deeper understanding about meat quality and processing you could:
- Walk your students through the Sheep Assessment Manual (MLA)
- Ask students to watch the MSA sheepmeat video
- arrange an abattoir visit to observe sheep meat processing and experience first hand the impact of genetics and management on carcase characteristics and meat quality
- invite a butcher in to explain cuts of meat, including valuation to the class
- highlight meat quality differences when comparing different breeds of sheep.
